Okay, I added a bunch of songs to iTunes (Windows) and organized them by album...now, how do I create a playlist that has certain songs in them? Can I put all the songs in Album 1 into an ALbum 1 Playlist, etc?

If you select all the songs from one album and drag them to the source list on the left, it will create a new playlist with those songs, and automatically set the name of the playlist to the album.
You could also just click the Browse button in the top right corner of the iTunes window and select whichever artist/album you want. In my opinion, that's better than cluttering up the source list with a bunch of album playlists.
