I was fiddling around with Word just now, trying to find the subscript shortcut (Command+= for anybody who's curious), and discovered that when Command+Option+- (minus) are pressed, a sort of bar replaces the cursor. For the life of me, I can't figure out what it does, except that when you type some text, the bar reverts back to the normal cursor, but then refuses to turn into the "text inserter" thingie.

Anybody know?

Yeah. That's how you remove items from the Work menu. You hit that key combination (cmd-option-minus) and use the big minus sign to select the document which should be removed from the menu. You can read more in Word Help.
