I have a Word document that was written with Word 2000 for Windows. The document was written with the font Garamond. When I open the document on my Mac in Word X it displays the text and calls the font Garamond. The problem is that the font does not look like the Garamond that is displayed in Word 2000 on Windows. Additionally, I don't have Garamond loaded on my Mac and it only displays in the font menu when the cursor is near Garamond text. If I change the font of some text to another font and then try to change it back to Garamond it won't let me because Garamond is not loaded on my machine.

So what font is Word X using as a substitute for Garamond? How does Word X do font substitutions for fonts that are not loaded on the machine?

Default Substitutes are stored in your home Library/Preferences/Microsoft/Word Font Substitutes.

Edit from Word Preferences, Compatibility tab, click "Font Substitution" button.
Amazingly, you could also learn this by selecting "Search Word Help" from Word's Help menu and typing "font substitution".
