On my pc I use Outlook to organise everything I do. How simlar is Entourage?

Would I be able to trnasfer my pst file across and pick up where I left off?

Also I have a Windows/Motorola smart phone, will this sync with the Apple by bluetooth or usb? Would a Nokia phone work?

Can't speek to Entourage/Outlook similarities - you may just want to look at microsoft's page and see what features transfer across.

You can check whether your particular phone will sync (using iSync) on the isync web page: www.apple.com/isync/

Im looking at the m$ pages and some reviews - hoping someone on here with expereince of using the software.

I use Entourage on my Macs and Outlook on my PC. You won't find the interfaces very similar (IMO, the Entourage interface is better) but they are similar in terms of functionality except for one major point: talking to an Exchange server. If that's critical to your work, then Entourage is not the way to go as it lags far behind Outlook. However, I don't know about the new (2004) version.

PST files also don't transfer across platforms, but you can import your data indirectly. Here's one method:
