Yep.
You have to have Palm Desktop installed, but instead of using its outdated interface (Palm bought Claris Organizer from Apple back in the System 8 days, and hasn't really done much to update it since then), you can use:
iCal for calendaring/to-do's
AddressBook for addressing things
iSync for syncing everything (though this depends on the presence of the palm conduits from palm desktop)
There's no current Apple app that will sync with your notes on the palm so if you use those a lot you probably need to stick with the ugly/oudated palm desktop.

As a complete alternative, you can check out DayLite - a nice CRM app that may be overkill for a single user, but they've developed their own Palm syncing mechanism that covers notes and everything.
