I occasionally see something in my inbox like CUMLOADS ALL OVER HER FACE and I'm pretty sure that I don't have any desire to read the email, but I want to classify it as junk so I don't have as high a likelihood of getting it anymore. I get the sense that loading the images in an email flag my address as being active, so I'd like to junk and delete the mail without reading it. Is there a good way to do that?

Close the preview pane so that the main Mail window only shows the list of e-mails.

Close the message view pane and put the "Mark as spam" button in your toolbar. Also, turn off "Show embedded objects in HTML messages" in prefs. You will have the option of loading them for emails you trust (a button appears atop the message) and you'll be safe from malicious images in spam.

Don't you have it set to automatically move Junk messages to the Junk folder?
If one happens to make it through the Junk filter and show up in your inbox, just drag it to the Junk folder (click and drag all in one motion, and the message won't be selected and won't show up in the preview pane).
