Is there a way to put my MP3's on my external hard drive and they still show up on iTunes and are able to be played?

I have an MacBook, 15" monitor, 1 GIG ram, 120 gig internal hard drive, 500 gig external hard drive, and an iMac with 40 gig internal hard drive with iSight web cam. Using Mac OS 10.5 Leopard

Um.. yeah..
In iTunes' preferences, just go to advanced and do one of the following:
1. turn off the option to keep your iTunes Music folder organized then just move your music over.
2. change your iTunes Music folder location to a folder on your external drive.
Of course, if you remove your external drive, iTunes won't be able to play the music on it. But that's obvious.

I have a side question to this. I put my iTunes playlist and songs on my external hard drive. I then try to access them from my wife's account, but nothing shows up in the library. I have tried to give permissions to her, but it won't change to her name in the get info box. Any ideas?

To let your wife's account use your music, you must do two things:
1) Point her iTunes music location preference to your external hard drive.
2) Under the File menu, select "Add to Library" and point it to your music.
She'll have her own library file, but it will be playing your songs. She also needs at least read access to your library, but she probably has that by default on an external drive.

If you don't want to repoint your iTunes home, you can dynalically link to the non-iTunes controlled files.
After disabling iTunes organization, open a finder window to the folder that contains the MP3s (on your external HD), and drag that top level folder into your iTunes Library window. It takes me up to 30 min to import (i.e. parse through the ID3 tags, and build up iTunes internal database/XML) all of the files if I have (25,000 tracks over 100 Mbit ethernet), so patience is a requirement. If the HD is locally attached, this should be much faster. Each iTunes user will have to perform this import (though you can copy the iTunes XML file between users to save some of the import time - but this may be more confusing than need be).

No offense to the other posters, but I will tell you the correct way to go about doing this...
1. In iTunes' Preferences > Advanced, set your iTunes Music Folder to the folder you want to use on your external HD.
2. Go to the Advanced Menu > Consolidate Library
That will copy all your music to the new folder you just selected, and will keep all your playliss, ratings, and play counts. It will also allow you to keep the folder organized. DO NOT move your Library files though... those need to remain in your Home folder on your system drive.
