Text size when using Mail to e-mail Windows Users

When I use Apple Mail to e-mail Windows users the text size comes out really large for them. I have tried adjusting the text size in Mail but the problems still exists. Does anyone know how to fix this?

Also - when I cut and paste html and send it in an e-mail to Windows users it comes out as lots of attachments. Anyone know if there is a workaround for this or a way to e-mail windows users web pages?
