I'm thinking of getting a Sony Ericsson T616 Bluetooth wireless phone. If I add a phone name, number or to do item on the phone will iSync add those to Phonebook and iCal. Or does sync happen only from computer to phone?

It goes both ways. In fact, you can specify how you want the sync to work.

Been doing this with my siemens s56 for a while now - it works both ways. In fact, it's SO easy. Someone calls me, I use the caller ID to save their number into my phone, and when I sync the phone, it shows up in the address book of all my macs (.mac syncing). Really nice, and useful.

Highly recommended... syched everything from my T68i into my new 616 with no problems. Works both ways.
