Have you actually tried using any software packages yet? Depending on how neat the text is, you may or may not be succesful. Last time I checked, the best OCR reader, recognition-wise, was FineReader, but I believe it's still OS 9 only. I assume it runs in Classic though. I would just try and get some demos and see if any of them can accomplish what you need.
Most handwriting recognition, like Ink and Graffiti work not by actually analyzing the finished lettter forms but the strokes used to make them. Again, depending on how clean the text is, you may or may not be out of luck
