What's the best balance of size and quality when it comes to importing files off a CD into iTunes? I've been using 160kbps mp3 but I was wondering if a different format would allow me to have smaller size files at better sound quality.

128kbps aac files will sound as good as, if not better than 160kbps mp3s in a smaller file size.

What he said.

Don't re-encode MP3s though, only do this when importing original sources.

I use 128kbps AACs. They sound good enough for me, and they save space.

The only problem with Ripping to AAC files is that you can't make an MP3 CD.

You can of course make Audio CD's but if you have a CD player that can play MP3 CD's then AAC files will not play on it.

Burning MP3 CD's can be really useful for in the Car or if you want to make a long playlist for a party.
