I accitdentally deleted some playlists in iTunes, is there anyway to get them back?

Sure, assuming you backed-up these two files somewhere:
/Users/username/Music/iTunes/iTunes Music Library.xml
/Users/username/Music/iTunes/iTunes 4 Music Library

Among other places... I always drag a copy of the entire
/Users/username/Music/iTunes folder over to my iPod,
after every sync.
