alright this may get confusing in the decription but it's really strange.

Alright, I'm talking to my girlfriend on Proteus over the MSN network.
I have her also on iChat, where I use my .mac account and she uses her aol account.
However, we're not talking on iChat, only through MSN.
Suddenly, her contact on iChat acquires her picture from MSN where she had none before. She has not made the change, and it would appear that she doesn't have that pic with anyone else she talks to using aol.

SO my question is, how has iChat grabbed her MSN pic without mine or her's doing?

Her MSN icon likely migrated from Proteus to AddressBook to iChat (all locally, which explains why it's only you that sees it on aol/ichat.

Just a guess.
