I remember reading somewhere about people getting errors and kernal panics when using Virtual PC 7 with more than 2 Gig of RAM...
Is there an easy fix for this or do I just have to wait for a patch?

Remove the VirtualPCOSServices.kext and the VirtualPCOSServices folder from StartupItems.
This seems to get things working on a G5 w/ > 2Gig.

but up to and including 2gb is ok?
I was thinking of adding 1gb to my dual 1.8 (currently 1.5gb), but perhaps I'll either just add 2 x 512 and take out the 2x256 (I can find some place for them) or (and this seems silly) just buy 2x256-- which is sort of slot-wasteful, though luckily I have the 8-slot rev. A dual 1.8.

Supposedly up to and including 2.0GB is ok, but more and there are problems.
I'm using VPC7 right now with 2.5GB in my G5, but I have removed the VPC kernel extension; this results in slower performance, but at least it runs until MS releases a fix.
I would have thought the fix would be available by now, but hopefully it wont be too much longer.

This just in: try the Virtual PC 7.0.1 updater.
EDIT: I don't have a G5 with 2GB+ of RAM to try this on, though. Just curious if this is actually taken care of.

Yes. This patch fixes the 2GB barrier on G5 machines.
I had been using VPC 7 successfully with the VPC kext removal work-around, but performance was pretty poor. With the 7.01 update, the kext is back in place and performance of Windows XP Pro on a dual 2.0GHz machine with 2.5GB of RAM (512MB allocated to VPC) is very good.
In fact, the performance is good enough to have ClearType font smoothing in Windows and smooth scrolling in Firefox 1.0 both turned on. I am in fact posting this message from Firefox 1.0 in Windows on VPC 7.01...

Well, we now need to run VPC7... don't ask.
I am a little confused... we would NOT be using any PC-based e-mail program, but is still a chance that opening an infected attachment in the Mac environment could infect the PC environment?
Do we need PC antivirus software? If so, which is recommended?
TIA...

No. Viruses are like any other program: they'll only run on their target host. You'd have to run it inside the emulated environment.
