I´ve just sold a s**tload of DVD`s on Ebay. There are however a few scenes from every movie that I want to keep (for example the slo-mo scene of Lucy Liu with the M60 in Ballistic). If I buy Snapz Pro - can I capture that scene in "perfect" quality?

How much disc space does it require? (let`s say a 1 minute movie, half size, highest quality)?

The quality Snapz Pro X is able to archieve is highly dependant on the specs of your Mac.

However if you want the best quality it is not the way to go, you will get better results ripping the DVD and cropping the scenes.

eevyl is definitely right regarding quality: ripping is the way to go. But that will be rather time consuming if the tool you use can't select a certain timecode range to rip (and I"m completely unaware of one that can but perhaps someone else knows).

If you do have a fast enough mac, you can capture DVDs at very good quality. I have a dual 2 G5 and it captures DVDs flawlessly.
