The only thing that prevents me from asking for iLife '04 for Christmas is the very real possibility of it getting updated soon afterward.

So my question is: anyone know of an ETA for iLife '05? January? February? When?

I suspect that it will come out at the same time as Tiger (MacOS X 10.4) as it is inconceivable that iMovie etc are not going to use Core Video (which rocks if the Motion Trial is anything to go by). Don't expect anything until March at the earliest IMO, but as ManOfSteal says, wait until the Keynote at MacWorld in early January to see if any news about iLife is provided.
