I'm dealing with a 120GB+ size iTunes library. Lately I've just been shuffling all my music from drive to drive, larger and larger. I've reached my biggest drive, and now I'm wondering if you can have files on more than one drive. Is this possible?

If you use manual management yes. If you use automatic library management: no.
