Does it reset every 24 hours, or just every time you quit Safari?

I just noticed that my history is gone also. Only the pages I visited today are in the history
I'm using Safari 1.2.4 (v125.12)

Try deleting your history.plist file ~/Library/Safari/History.plist while Safari isn't running, and then re-launch and use it for another 24 hours to see if it might help it out.

I posted about the same problem a while back.
I found that turning off the computer instead of putting it to sleep for each day will lead Safari to retain the history and if you do it 7 days straight, history retention will be back to normal and you could put your computer to sleep again.
Safari only seems to save history for a max of 7 days.

Do you use TinkerTool at all? It lets you set how far back Safari's history can go (None, 500, 1000, 2000, and 3000). I had set to about 500 once, and it hardly went back further than a day. 2000 works nicely if you browse a lot.

So when Safari has reached it's maximum stored items (500 or whatever), does it delete ALL of them, or just the oldest?

Just the oldest... I think.
My history goes back to Friday, Jan 21st, but only contains 951 items, when it's set to 2,000. But I might have just changed it from 1,000 and TinkerTool reports that changes only take affect after quitting Safari (which I probably haven't done in like five days). So I'm not entirely certain.
As MacGallant said, Safari may only go back about a week.
