so, I like an idiot, imported my entire CD collection into AAC to conserve space and my new head unit in my car plays mp3 files but no AAC. Is there a way to convert all music in my itunes library into MP3 format from AAC? *edit, I figured out how to do it, BUT I am still curious about quality loss*

You will lose quality. How "much" is subjective. Convert one and rip the same song at the same bitrate directly from CD. Compare the two and you know how much you lost.
