I'm trying to switch from Mail to Thunderbird. I have my IMAP account set up on my server with a few subfolders. I've put in my account information into Thunderbird, and it comes up with the top level but doesn't bring up my subfolders.

try this:
Go to Account settings -> Server Settings
Click on the Advanced button on the erver Settings Group.
Uncheck the "Show only subscribed folders" option.
Say "Ok", and reload your account.
This should help, i guess.
