Rather then go through the time of selecting each thing i want to backup it would be nice just to create a disk image of the user folder that I could backup to an HD. Is there a piece of software that will do this for me? I tried CCC but it tells me i don't have 2 logical disks mounted...

Or turn on Filevault and that makes an image of your home folder. FYI, if you do make a disk image of your home folder, make sure you don't select the destination in the same folder or it will give errors.

If you want to back up your home folder to a disk image, you can use my own iPodBackup. It's made to backup to an iPod, but you can trick it into thinking any drive is an iPod by putting a folder called "iPod_Control" in the top level of the drive.
