Composing mail in HTML using Mail.app

Just installed Tiger and one of the new features of Mail is composing mail in HTML format. I can't seem to find the ability in Mail anywhere. I still only have the two choices of rich text or plain text. Any thoughts?

Plus you can make an HTML page in your favorite HTML app, show it in Safari and create an HTML mail from there if you want more than basic HTML emails.

Hmmmm, that's an idea....wish there was an easy way to just do it Mail.app. Want to add stuff like links (not in the URL format), formatting in tables, and such without having to use multiple apps.

Links are easy. Type the link name, highlight the name and right click and choose Edit Link...
