hi, i just get a trial version of i life (keynotes and pages), and found the following question :
i just can't change the background color from a specific theme? the color do change by setting in the master slide inspector, but also lose the theme

Could it be that by theme you mean background? A lot of the themes are just custom backgrounds, and so if you try to change the color, you're gonna lose the background. You might be able to use the themes background image and the tinted image fill setting to change its color.
