Every resizable window has an area at the bottom right with diagonal stripes. Drag there to change the size of the window.

Perhaps the mre important question is why you would want a text editor to take up the entire screen?

There are three "gumdrops" at the top of all windows. Red closes, yellow minimizes (hides on the dock), and green maximizes the window. Green doesn't always make the window full screen, but I tried it with a blank TextEdit window and it went full screen. Click it again and it goes back to smaller size.

There is no need to make everything full screen. If you try to make your Mac act like a Windows machine, you will be sorely disappointed. Just try to go with the flow and enjoy not wasting your screen real estate on a text editor.
