Let's say you bought your sixth Mac. Now, since you've already used up all five iTunes/iTMS accounts with account joeschmoe@xyz.com, you need to re-set the counter. When you use "Deauthorize All Conputers," how can you use your account, joeschmoe@xyz.com on the new sixth Mac? In other words, how can you set up this new machine with your old account info for this sixth machine?

There is no "Deauthorize All Computers". You can deauthorize one of your existing 5 computers from that computer and after that you will be able to authorize the new one.

Actually, there is (but it only appears if you've used up your authorizations):
f you find you have reached 5 authorizations due to system upgrades, you can reset your authorization count by clicking Deauthorize All in the Account Information screen. Note: You may only use this feature once per year. The Deauthorize All button will not appear if you have less than 5 authorized computers or if you have used this option within the last 12 months

I imagine it means deauthorize all [other] computers, leaving only the one doing the deauthorizing as authorized.
