Huh?
Were there supposed to be some images in your post that got lost or something? 'Cause I can make very little sense from what you wrote.
What do you mean 'are there supposed to be server icons viewable'? You mean whether there will always be an icon to the servers you have connected to on your desktop, next to your hard drive icons etc.? If so, then I think the answer is yes, there will; or rather, I don't know how to get rid of them, if that is at all possible. You can of course get rid of them by dragging them to the trash bin (ie. ejecting them, since they're virtual drives, rather than folders or files), or right/Ctrl-clicking and choosing 'Eject X', but that also closes the connection to the server.
I still can't figure out what you mean with whether or not you install applications correctly, or what that thing with “when I click to view my hard drive...”

Installing applications on the Mac is unfortunately rather complicated and you are not the first one to be confused about it.
Most applications are distributed as "disk image"s (file extension .dmg). They are somewhat like a CD just as a file not a physical disk. By double-clicking you mount the disk image and you see it as such a white drive on the desktop (just like you would see a CD that you inserted into your computer). On that disk image you find the application. You are then supposed to drag the application icon (Firefox, Adium etc.) and drop it into the Applications folder. This will copy the application to the Applications folder (which is the actual "installation" process). After that you can eject the white disk image and trash the disk image file.

hmm... ok, so i definately did install some of them incorrectly. shouldn't be hard to fix. so when you want to uninstall, do you take it out of the applications folder and throw it in the trash?
