apple mail fonts in outlook

	Whenever i write a mail message using apple mail and send it to a colleague that is using microsoft outlook, all the fonts are changed to times new roman. Changing the font preferences in apple mail seems to make no difference. also, messages sent from outlook that are then forwarded or replied to back from mail to an outlook client appear riddled with question mark characters. anyone know of a fix?
