I could stand on my high-horse, but I won't, since I wouldn't have wanted parents banning me from IM-ing as a teen
To replace Mercury's icon with Quicktime Player:
Find Quicktime Player in the Finder
Press Cmd-I (or select 'Get Info' from the File menu)
Click on the Quicktime Icon in the Get Info Window.
Press Cmd-C to Copy
Close Get Info Window
Find Mercury Messenger in the Finder
Press Cmd-I
Click it's icon.
Press Cmd-V to paste the Quicktime Icon on it.
And remember to keep Cmd-H handy to quickly hide Mercury when he walks past. F11 is handy for a quick hide of everything too.

Yep. Just change the name of the app to whatever you would like it to be called. Very few apps will break if you change their name - I doubt Mercury will even notice

Hide running app's Dock icon
If you want to copy/paste an app icon, use the Get Info window (apple + I), select the icon and copy, repeat and paste.

Find Mercury Messenger, probably inside the Applications folder. Press Return to start editing its name. Press return when you are done.

Hmm. You have to be an admin user to make changes to items in the Applications folder. Perhaps you're not one?
If so, you can install your own copy of Mercury into the Applications folder inside your home directory.
