I found this setting in the Preferences under Advanced > Burning > Audio CD.

What does "Use Sound Check" do? Itunes help proved useless when I was searching for what sound check was.

You can see what Sound Check does under Playback too :
"Automatically adjusts sound playback volume to the same level."

It basically analyses your song files to make sure that they all play at the same volume.
This might be important if you have songs of varying volumes such that there's an annoying (and potentially harmful) difference between songs.

Its useful.. But not entirely foolproof at all.. It has caused some very annoying distortion problems in some songs for me. So now i leave it turned off.
The worst thing about having a failing memory is..... no, it's gone.

I've had mixed luck using this option for burning CDs. Most of the time everything works fine. But occassionally, a song or two just sounds terrible on the burnt CD. It's almost as if iTunes adjusted the volume too much. If a track is too quiet, the volume is increased so much that it sounds really bad on the CD.

I'm not exactly sure how this option works, but from what I can tell from playing around with it, an average volume is chosen based on the selected tracks. All of the tracks are adjusted up or down to match that average volume. Anyone know if this is even close to how it actually works? Haha.
