When I have a mp3 or a soundbyte open in my Safari browser using QT and I go to File and save as, it will save but it will only save like a 1 sec clip and not the full byte.

If the sound is being played by the Quicktime Plugin (which would look like a Quicktime movie controller) then there should be a little pop-up menu at the far right end of the Quicktime controller (it looks like a little arrow). That menu should have an item to "Save as Quicktime".
Note you must have Quicktime Pro for that to work...
