How do you stop items being 'installed' to the desktop.

I downloaded Thunderbird and a couple of .gz files were downloaded to a folder on the desktop, but also a folder (looks like a disk icon) called Thunderbird was installed to the desktop with the program file inside of it.

How do I get it, so this isn't on the desktop, and instead it's placed in my applications folder with an icon on the dock bar for it?

It sounds like it just expanded the compressed disk image and then mounted it. You should be able to just drag and drop thunderbird to your applications folder.

When you launch an app it will be placed in the dock and to keep it there you can either right click it and select keep in dock or you can drag the app to the dock while it isn't running.

Thanks SSharon, but every time I try and drag the program to the applications folder it just seems to put a shortcut (sorry dunno what the Mac term is... alias? - it's an icon with a little arrow on it) in the applications folder.

And when I try and copy and paste the folder I get told that I don't have sufficient permissions for some of the items.
