Sometimes I make text bigger, smaller etc. How do you know where the default is? thanks

Preferences... -> Appearance?

Or how about Preferences... -> Advanced -> Never use font sizes smaller than __

Apple + makes it larger, Apple - makes text smaller. Don't hit random keys with the Apple (command) key if you don't know what they do.

Also, you can go to View and see the key commands.

If you check the appearance setting and use that same font in textedit, by holding them next to each other, that will give you the right size. I think it would be handy if there was a reset size button.
