There are a few web based things written in php, etc. not mac specific but you could easily run it on a mac. A web server based solution will let you have multiple staff members share it and let you access it from anywhere.
We use TestTrack Pro ( http://www.seapinesoftware.com/ ). It's intended as a bug tracking/reporting system, but it works well as helpdesk software, too. Runs natively on Mac OS X (the server does, anyway, and I think it has a GUI app for submitting new "defects" or "tickets" or whatever you choose to call them). We just use the web-based portion of it, with our own custom front-end.
