IPTC and Mac apps - scanning old photos

I'm about to embark on my first project to scan (to tiff) in a number of family albums, and figured it would be good practice to tag images as I scan them. I will most likely be doing this solely on the Mac, but want to make sure that I don't go through a tremendous amount of work only to have it lost by switching computers, software packages, or file types.

I have read a bit about iView and also Informator (which seems quite straightforward), but didn't know if there is one that is most recommended for Mac users.

I have also read that iPhoto may not be able to read this information, so is there another app I should be using for my viewing/editing? Aperture?
And is the IPTC information always retained when I burn to DVD to share with family and friends? Or is it lost if I change the file type or share via the web, for example?

I like Photo Mechanic for IPTC data editing. Very powerful features and batch processing!
