So I like the new FrontRow in the new Mac Mini. I would like to use the Mini as the client to stream audio/video from a Linux server that houses all my media. Knowing that FronRow is looking for an iTunes server to stream from what are my options for a Linux backend?

Just downloaded Debian since I saw that its included in that distro. Do you know if it does more than MP3's though? Does it do the rest of iLife?

As for video files, you can mount the server on the mini and place an alias to the directory in your Movies folder. It would also be wise to install the latest codecs for quicktime (3vix, DivX, flip4mac wmv, etc.)
For photos, it might be a little bit more involved. Front Row displays photocasted albums just as well as regular ones, so in theory (and with a little time), i'm sure you could rig up an apache-served php-generated photocast xml file based on a directory of photos. Hell, you could probably use some open-source php rss generator to do most of what you need and then tweak it slightly.
Good luck! Sounds like a fun weekend project.
