hi there, i'm doing my hiv reserach right now and always bring my powerbook to my lab. i'm interested in how/what people use in things related to science, here's the things i always use:
1. omnioutliner -- to make notes for my paper
2. grab -- to grab some useful figures from paper
3. bookends -- my reference manager
4. keynote -- for my presentation
5. microsoft word -- write stuff
6. microsoft excel -- make tables
7. iflash -- flash card to refresh stuff
8. dictionary -- to check up vocabularies from papers
9. omnigraffle -- to make flow charts

can't think of anything else i would use.....what about you?
