Click the + icon and then click the Manage Widgets button, in order to disable widgets. To remove them completely you need to go into /Library/Widgets or ~/Library/Widgets and trash them.

Actually, when you click the - button to remove a widget in the Widget Manager, it will ask you if you want to move it to the Trash. One thing to note, the minus only appears for any widgets you have installed yourself and not for the default system widgets.
