Preview app is turning some of my eps (Illustrator) icons to the generic Preview icon. Even though I've assigned all image files to open with the Adobe apps which created them. Would it cause a problem if I trashed the application? I never use it.

Preview is an excellent, and fast, pdf viewer. I'd keep it.

You could remove the entry for eps files from the Info.plist inside of Preview's package.
Or you could replace its eps icon (inside Contents/Resources) with a preferred icon.
