I really only need to back up iTunes music and videos

How can I back everything up including album artwork and album names ect?

Artwork and names are stored in the files themselves, so if that's all you need just backup your iTunes Music folder. You can copy it to an external hard disk, or burn it to a CD/DVD. If you need things like play counts and ratings preserved as well, make sure you also save your iTunes Library file, located in User/Music/iTunes/.
