Converting an AAC to an MP3 doesn't work within iTunes, or it least it doesn't with iTunes 6.0.1. Since it would defeat the copyright protection which is the reason AAC exists in the first place, I wasn't too surprised when I tested..
There is a thread about this over at Mac OS X Hints, perhaps a solution can be found in it.

Well, AAC has nothing to do with copy protection (except that it's the format Apple chose to copy protect in their store). If you want to break the encryption (not sure exactly why), you cannot. Hymn has not cracked the iTunes 6 protection.

Converting an unprotected AAC file to MP3 within iTunes should work just fine. If the OP wants to convert PROTECTED AAC files to MP3 (for example to listen to on something OTHER THAN AN iPOD), he'll have to find a way around the protection. I burn the songs to an audio CD and then rip MP3s (at 320kbps, the highest bitrate possible) so I can do just that. It also allows me to preserve the songs I PAID FOR such that I can listen to them however I'd like, even without iTunes.

yes. I want to listen the songs I bought from iTunes on another mp3 player. is there a program to do that or I just h=got to burn a Cd with avery album I buy on iTunes?

As King Bob mentioned, there is an application that can remove the DRM from files purchased with iTunes 5 and earlier. You're out of luck with iTunes 6, gonna have to burn the songs to CD.

If the songs are copy-protected, the only way to convert them is to burn them onto a CD and then re-rip them.
