Do they have to use only Apple software? Why would they? Do you use only Apple software? Does Apple make an application for everything? I don't think Apple has ever claimed that their apps can completely replace After Effects, Photoshop, Renderman, etc.

That's not what your original "point" was, but for the sake of arguement--It would be extremely disruptive to a presentation to stop and explain the technical aspects of how it was created.
The "show" is more penetrating when it looks like magic, and the audience feels more drawn into the experience when they forget about the man behind the curtain pulling levers.
Apple knows this...it's a show.
