I've got a bunch of mp3 files with no ID3 tags. I know there are a bunch of tag editors out there (including in iTunes), but can any of them add tags to tagless files? And once added, can they be modified by iTunes?

iTunes can add tags to tagless files. Just enter the missing information either directly in the list view (click onto a selected song and wait a little bit) or in the Info window. If you select a whole album it can automatically look them up (Advanced->Lookup CD titles or whatever the command is called in the English version).

What I have are not stolen music files. Actually, they're not even music files at all.
