I'm looking for a program where I can insert mathematical equations right into a nice text editor. Similar to Microsoft's Equation Editior, but more powerful. I'm come upon ones that use Latex, but I really don't want to have to learn Latex to do this... it would also be nice if it would work with Pages, NeoOffice, or MS Word.
Any ideas?

LaTeX is THE standard in science, in particular mathematics. If you want to study math or do math professionally, there is practically no way of getting around LaTeX.
OpenOffice also has a powerful equation editor which has a similar syntax to LaTeX.

Math Type is kinda like an upgraded Equation Editor, Math Type can edit the equations in Equation Editor .. I've used this from the PC world ... and what makes it great is that Math Type is also available for Mac : )
LaTeX is great for any kind of paper writing and such. It can format everything into anything you want basically. My thesis and papers published are written in LaTeX to publishers.
So it really depends on what you want to do with it.

LaTeXiT is great for cranking out a single equation. But if you want to make entire documents in LaTeX, you'll want something like TeXShop.
You'll also need to install a LaTeX backend. The TeXShop website has instructions on how to do this.

Start with TeXShop. You have to install LaTeX separately (just follow the instructions on TeXShop's homepage), but everything is free, though.
Get some example documents and you'll find out how easy it really is.
TeXShop has very nice viewing features, although nowadays I use TextMate as my primary editor (which is not free). Also, you might want to check out LyX, a wysiwyg editor for LaTeX.
