There are a few podcasts around on the net that you can't find through iTunes like this one: http://www.will.uiuc.edu/am/mediamatters/default.htm

You just download the mp3 and then listen to it right? Well what if I want to add it to the Podcasts pane in iTunes and make it remember where I paused it from a previous listening. It seems like only podcasts downloaded through iTunes will show up in that convenient area. Any way around this?

Dig one page deeper into the website, and you will find the link to paste into the "Subscribe to Podcast..." drop-down in iTunes.
This is the subscription link:

Yea but what about stray mp3 files like this one

http://www.theflux.tv/files/podcasts/fluxradio27.mp3

It's an interview with Ellen Feiss. How do I make iTunes recognize it as a podcast?

Yeah...that's the toughie.
One thing I've noticed is, whenever you subscribe to a podcast, the latest edition downloads, while most of the previous editions become available for download. So, try subscribing and see if the particular edition is available.
Yeah, it's a small pain to DL the podcast again, but, if you want it pausable, it's probably the best way to go.
