Why is it that in applications, like Safari, when you go to File->Services most, if not all the options are grayed out. I was trying to use Grab to take a screen shot, and instead of doing it from an application through File->Services->Grab I had to open Grab separately and do it outside of the application. Is there a way to make the Services in an application not be grayed out?

The Grab service only works if it can paste the screengrab in the current application's front document. Since a web page is read only it can not paste anything into it in Safari, so the service is grayed out. It works if a TextEdit document or a new mail in Mail is frontmost.
Use the keyboard shortcuts instead:
⌘⇧3 takes a screenshot of the whole screen
⌘⇧4 takes a screenshot of the area you select
⌘⇧4 then press the spacebar takes screenshots of the window you select

those shortcuts have saved soooo much time for me this last year.

Thanks. The thing about using those shortcuts is that I can never figure out where the screenshot is saved. With previous versions of OS X/OS 9 it would be saved on the desktop. But It no longer saves there, and I cannot figure out where it is saving them...any input?

The screenshots are saved to the Desktop. I don't think this can be changed.

Only way I know of overiding the screen shot location is to use the command line "screencapture" command:
screencapture /Users/steve/screenie.png
You could maybe wrap this in applescript and/or automator...

Include control in the shortcuts above and the image is put on the clipboard to be pasted rather than saved to the desktop.
