I've been using notebooks for a very long time- mostly Windows based. About four months back, I sold my Sony S series and got a Mac Book Pro and am totally loving OS-X.
However, I feel that apps take a lot longer to load on MBP than my Sony, even though I have a 7200RPM drive on the MBP compared to Sony's 5400RPM. For example, Pages takes almost 10-12 seconds to open, compared to Word on Sony which barely took 5 seconds. Firefox takes 8 seconds compared to 5-6 seconds on the Sony. I'm trying to use Universal Apps so Rosetta does slow things down.
Another thing is that viewing video files on MBP over WiFi is terrible compared to Windows. I have some Divx movies on my network that had no problem streaing and playing without any problems on Windows- however, with OS-X, I have continous pauses using either VLC or Quicktime- as though the network bandwidth isnt enough.

How much RAM do you have? And how much free hard drive space? Pages takes about 7-8 seconds to open on my Intel iMac with 1.25 GB RAM

Same setup here, Firefox opens in about three seconds.

For Firefox, make sure you have the latest version. If you have the older, non-Universal Binary version of Firefox, it will take quite a while longer to launch.

Why do you keep comparing Pages to Word? Pages is closer to InDesign than Word. Plus Pages is over 800MBs in size. It has to scan through hundreds of megabytes of templates each time it launches when it presents the template viewer at launch.
Also, MS does some tricks to have PC Office apps launch quickly. It preloads many of its DLLs at boot time.

Abbas,
Get in the habit of leaving most of your running apps running. When you do that, launch times don't really matter much. I only quit when I know I won't need the app for quite a while.

Correctly me if I'm wrong, but I believe that MS Office on Windows cheats by pre-loading in the background (or something to this effect to shave off app start-up time) when Windows starts up. Same goes for Internet Explorer.

I was running pages without Parallels- but I guess people are right. I have read that Office cheats by loading dlls during windows startup. Firefox, after a clean reboot took 4 seconds to launch on Mac which is about the same as Windows.
I wish there was a better client for Exchange than Entourage. Since I am on an exchange server need to sync contacts, claneder and emails, I've decided the best way is to have Parallels with Outlook running and using VirtueDesktops.
So that takes care of the apps- any suggestions on Wi-fi streaming of videos?

You may not care now, but you can go into prefrences in Pages and tell it to start up with a the Blank template. As for myself, I rarely use the other templates, so it's a waste of time to have that load. If you have that prefrence set to Blank, Pages only takes about 2 seconds to load. At least it did for me, and I only have the stock 512 RAM in my 2GHz MB.
Just for the tidbit of useless knowledge it becomes.
