OK, this may seem like a stupid question, but how do I edit an HTML document on OS X without Dreamweaver or something?
I've got some very simple pages (including ones generated by Aperture or iPhoto, etc.) that I want to hand edit (just to make some very basic changes), but if I use TextEdit it tries to interpret the HTML. Even if I change the file suffix to .txt, it does the same thing.

vi?
I use BBedit. There's also simpletext in one of the developer sample app folders if you have the dev tools installed. Or you could view the source in Safari and copy it into a blank document (textedit? word?).
Yeah, I was ever so pissed at TextEdit when I learned what you just learned.

TextEdit: File→Open…→☒ Ignore rich text commands
If you do this regularly you can make this behaviour the default in the preferences.
There's no need to change the suffix.

Download either TextWrangler or Smultron (both freeware text editors that will colour html tags etc to make them easier to work with).
