Olympus offers a few options for Mac users (this line should expand in 2007)

Olympus uses DSS file format for SP & LP and WMA for HQ & STHQ recordings. The DSS Player software packaged with the recorders above is Mac compatible. The software primary function is to download store and playback your audio files. There is a tech note for the Intel Macs
Olympus DSS Player for MAC - Recorders.com Community Forum we are hoping for a patch soon.
The DS-2300, DS-3300, and DS-4000 are primarily designed for dictation purposes. The DM-10, DM-20, DS-2200 are great for lecturers, interviews, and/or conference recording. Also we just recently started testing the Edirol R09 which just so happens to record in MP3 and WAV, might be worth looking at well.
