I hate when I launch iPhoto and all my pics are there, I have them in category on the folders at the left side, but everytime I get all of them when I start iphoto.
How can I launch iPhoto without photos but with all of them on their folders? I mean, Is there a possibly way to start iPhoto with a folder you choose or it is impossible to see other folder instead of the library one?

I'm not sure what you mean.. do you have a list of albums on your left side? All my items are in Rolls and I keep the Rolls minimized so they don't open unless I activate them. iPhoto always opens to the last roll I was working on.
I'm switching name servers so this won't work much longer.. but here's a pic:

As the image is no longer showing in Ben's post... in iPhoto, go to the View menu and select show film rolls. This will display all the photos in the Library as belonging to the "roll" they were imported with. Click the disclosure triangle next to a roll's name to collapse the roll and hide the images. If you do it for all the rolls, then no images will display when you launch iPhoto.
The alternative is to bypass iPhoto altogether if you are just wanting to select a few photos for use in other apps in OS X 10.4:

ok, I want to start with an empty window and if I want to see any folders or rolls or any pictures I just click on any of the forlders at the left. I dont want a screen full of pictures, I want to select the folder of pictures that I want to see and thats all. and it seems impossible.

That is not the way iPhoto works - it is not a file browser. For something that does that, I would recommend GraphicConverter. Fantastic program.

What do you mean about that iPhoto doesn't work like that?
