I downloaded some free on-line audio recordings from here
HarperAudio!
but I can't get them to open in iTunes because the file format is .au
Is there a way to convert these files to mp3 ?

You could try this web site, converts practically anything.
AU to WAV, MP3, OGG, AAC, FLAC, MPC, AMR, MMF, AIFF, QCP.

I tired that on-line convertor. It converted the file to mp3 all right but the contents were scrambled.
What did you do differently TETENAL ?

Recently I have been using the excellent Switch for converting audio formats. Very nice.

Yeah, TETENAL. Our iTuneses don't like converting .au files. What mojo you workin', man?

I don't think they're scrambled. That converter squeezed an 8:11 minute file into 22 seconds for me, no wonder it sounds weird.
Anywho, I had a look at one of them .au files, and it had a sample rate of 8kHz, mono soundtrack, and µLaw 2:1 compression.
So I used QuickTime Pro to convert it into an .aif file (iTunes converts .aifs happily) with the same properties, and it was plain sailing after that.
